Bacon Soup

Bacon soup is warm and inexpensive, but extremely tasty.
Ingredients:
- 200 g. (about 4 slices) bacon or pork fat, chopped into .5 cm. cubes
- 1 large onion
- 1.5 c. home made hominy or corn
- 1 parsnip or carrot, chopped and peeled
- 1 tsp dry parsley
- a good pinch of crushed hot paprika or red pepper, more if you like it spicy
- a dash of cracked, black pepper
- water (about 1.5 liters)
- gray salt or “vegetable condiment” to taste
- 1/8 cup parmesian cheese
Instructions:
- In a large pot, fry the bacon to render its fat.
- When the bacon is a little browned, but not dry, add the onion.
- When the onion is almost a little clear, add the parsnip or carrot, and hominy.
- Toss for a few seconds, then add the water, salt, and spices.
- Turn the heat up to high, then cover to bring to a boil.
- Then turn the heat down to low, and let it simmer for about an hour.
- Add the parmesian cheese, and stir until it is melted.
Serve hot with your favorite bread, or rice.
